The ultimate in traditional charcoal cooking Much better than a barbecue, this magnificent JOSPER charcoal oven can easily be installed in a professional kitchen. The JOSPER oven allows continuous cooking with embers at high temperatures (300-350 °C). It braises, roasts, browns or sears in no time.
Advantages: Time saving of around 35% compared to a traditional barbecue (1 kg rib of beef: cooking 10 mins). The JOSPER oven combines the advantages of an oven and a barbecue by allowing the use of ready-to-serve dishes. The JOSPER oven is very economical in charcoal and offers cooks better working conditions (less heat release than a traditional barbecue). Its efficiency is surprising and the taste of cooking in the JOSPER oven is recognizable among a thousand.
JOSPER ovens are available on a cabinet or as a countertop.
Fire damper / Draft regulator - Device to prevent sparks or flames from following the ventilation duct. Cools the temperature of the smoke and allows this smoke to enter the hood slowly and silently. This prevents turbulence and possible smoke returns and completes the safety of the fire damper.
